Summer Squash Grilled Chicken

I love grilling recipes in the summer!
No sense adding to the heat by turning on the stove:)

yellow squash
Italian dressing
chicken breasts
 Grate your squash into a bowl.
 Add shredded cheese and Italian dressing.
 Flatten your chicken breasts.
 Layer squash mixture onto chicken, and roll up!
 Secure with a toothpick.
Season top with salt and pepper.
 I cook mine on our outdoor grill on a piece of aluminum foil.
Spray the foil before placing your chicken, and it will allow this delicate dish to be served beautifully!
This grilled chicken is moist, full of flavor, and easy to clean up!!!
The mild crunch of squash and the melted cheese is a great filling.

I sometimes add a can of tomatoes to the squash mixture;
this adds beautiful color and acidity.
If you have leftover squash mixture, lightly saute' and serve on the side.

These can easily be prepared ahead of time and stored in the fridge.
So when dinner time rolls around, they go from fridge to grill to your PLATE w/in 15 minutes!
